My Healing Soup
This is my go-to soup when I hear any of my kids getting a cough. It's packed with nutrients and gives their immune system a little boost.

Ingredients
2 tbsp butter
2 celery stalks, chopped
2 carrots, chopped
1/2 yellow onion, chopped
4 garlic cloves, minced
1 orange bell pepper, chopped
1 red bell pepper, chopped
1 tbsp salt
1 tbsp dried parsley
1 tbsp dried basil
2 tsp cumin
1 bag frozen cubed potatoes
4 cups chicken stock
2 cups filtered water
for this one, I added 1 lb ground sausage (but you can exclude)
Recipe
- In a large pot on medium heat, add your butter, celery, carrots and onion. Stir and saute for a few minutes.
- Add in the orange and red bell peppers and the garlic and give it a stir.
- When the veggies are mostly softened, add in the salt, parsley, basil and cumin.
- Add in the ground sausage and cook it until it’s browned.
- Add in the bag of potatoes and stir it all up.
- Add in the chicken stock and water. Stir it up and bring it to a boil.
- Reduce the heat and let it simmer for about 20 minutes.
- Once the potatoes are cooked through, serve it up!
To store, you can put it in airtight container in the fridge or in gallon bags to put in the freezer.
