Italian Pasta and Beans
This Italian pasta and beans dish is a one pot meal that's simple and packed with delicious flavor.

Ingredients
1 tbsp olive oil
3 carrots, diced
3 ribs of celery, diced
1/2 yellow onion, diced
1 lb ground beef
3 garlic cloves, minced
salt and pepper to taste
1 tsp dried oregano
1 tsp dried basil
2 tsp Italian seasoning
1/2 tsp dried thyme
2 (14.5 oz) cans of fire roasted diced tomatoes
1 (15 oz) can of chili beans (or kidney beans that have been drained and rinsed)
1 (15 oz) can of white beans ( I like to use cannellini)
2 tbsp tomato paste
2 cups marinara sauce
2 cups beef broth
1 1/2 cups ditalini pasta (measured when uncooked)
fresh parmesan to top
Recipe
- Add olive oil to a large pot and add in your carrots, celery and onion.
- Add in the ground beef and garlic. Cook the ground beef until it’s done.
- Add in salt, pepper, oregano, basil, Italian seasoning and thyme. Give it a good stir.
- Add in the fire roasted diced tomatoes, chili beans, white beans (drained and rinsed), tomato paste, marinara sauce and 2 cups beef broth and give it a big stir to combine everything. Bring it to a boil, stirring occasionally.
- Add in the pasta and let it simmer for about 30 minutes until the noodles are cooked through.
- To serve, add fresh parmesan on top.
Otherwise known as pasta e fagioli– this Italian dish is delicious and easy to make. One pot and easy clean up which is always a top option on my list.
Ingredients in pasta e fagioli
- Carrots, Celery, Onion and Garlic– packed with nutrients and so good during the cold weather season
- Olive oil and ground beef– I like to use prepped ground beef so it’s quicker. I cook my meat on Sundays so it’s ready to use whenever I need throughout the week
- Dried herbs– this has quite a few, but they all bring such a great flavor
- Tomatoes, tomato paste and marinara sauce– lots of flavor, specifically from the fire roasted tomatoes
- Bean– you can use kidney beans or chili beans and then I like to use cannellini beans
- Beef broth– my favorite is Full Circle Market brand
- Ditalini pasta– I love using this pasta mainly because it’s great for a small kid’s bite and they’re a cute shape
- I serve this with homemade cornbread
