Ingredients
1 1/2 cups oat flour
1 cup vanilla protein powder
1 tbsp flaxseed
1 tsp salt
1 1/2 cups peanut butter
1 tbsp olive oil
1/2 cup honey
1/3 cup roughly chopped dark chocolate
Recipe
- In a large food processor or bowl, mix together your oat flour, vanilla protein powder, flaxseed, salt, peanut butter, olive oil and honey.
- Note: if you are mixing it by hand, I recommend mixing in the flour, protein powder, flaxseed and salt first and then mixing in your wet ingredients to ensure it’s all mixed nicely.
- Once it’s all mixed together, you’ll line a pan with parchment paper. I use a 9×9 because I like thicker bars, but if you want them to be thinner, use a larger pan. Once you line it with parchment paper, you’ll add the mixture to that pan and then smooth it out.
- Sprinkle your chopped chocolate on top and press gently on the chocolate so it pushes a little bit into the bar.
- Put a lid on your pan and then store in the fridge for the mixture to cool so they’ll be easier to cut.
- Once they’re chilled, cut them into bars and then store in your fridge until you’re ready to enjoy them.
Having these bars on hand for a quick breakfast, snack before an activity or after practice is great. They’re healthy, delicious and easy to make.
