
Garlic Chicken and Roasted Zucchini

Ingredients
2 lbs ground chicken
3 cups jasmine rice, cooked
2 zucchini, chopped
2 tbsp olive oil
1/3 cup maple syrup
1/2 cup low sodium sauce
3 tbsp tomato paste
2 tbsp sesame oil
3 tbsp rice vinegar
3 garlic cloves, minced
3 green onions, chopped up
1 tbsp sesame seeds
Recipe
- Preheat your oven to 400.
- Cook your jasmine rice according to the package and set aside.
- Chop up your zucchini and toss with olive oil and salt and spread out on a cooking sheet.
- Put it in the preheated oven for 15 minutes.
- In a medium saucepan, add your ground chicken and begin cooking.
- While that’s cooking, make your sauce by adding together maple syrup, soy sauce, tomato paste, rice vinegar, sesame oil and minced garlic.
- Once your chicken is cooked, stir in the sauce.
- Add in 1 tbsp of sesame seeds and chopped green onions. Stir it all up.
- At this point, your zucchini should be almost done. I hit it with the broiler for a few minutes to crisp it up a bit. Remove from the oven.
- To plate, add the jasmine rice to a bowl, top with the ground chicken and zucchini.
- Garnish with sesame seeds and green onions (optional)
