
Enchilada Skillet

Ingredients
1 lb ground beef
2/3 cup taco seasoning
1 cup water
1 can of black beans, drained and rinsed
1 cup frozen corn
1 cup enchilada sauce
2 cup shredded cheddar cheese
Recipe
- Preheat your oven to 350.
- In a medium skillet on medium heat, sauté your ground beef until it’s cooked through.
- Add in your taco seasoning and water and stir it up.
- Add in your drained and rinsed black beans and one cup of frozen corn and stir.
- Pour in one cup of enchilada sauce. Stir that up and put a lid on your skillet.
- Reduce the heat to low and let is cook and begin to bubble.
- Remove the lid, sprinkle shredded cheese on top
- Bake at 350 for 10 minutes, until the cheese melts.
- Top it with shredded lettuce, salsa, tortilla strips and sour cream.
