Enchilada Skillet

One skillet and it's so easy to make. That's a winning recipe for a weeknight meal!

Ingredients

1 lb ground beef
2/3 cup taco seasoning
1 cup water
1 can of black beans, drained and rinsed
1 cup frozen corn
1 cup enchilada sauce
2 cup shredded cheddar cheese

Recipe

  • Preheat your oven to 350.
  • In a medium skillet on medium heat, sauté your ground beef until it’s cooked through.
  • Add in your taco seasoning and water and stir it up.
  • Add in your drained and rinsed black beans and one cup of frozen corn and stir.
  • Pour in one cup of enchilada sauce. Stir that up and put a lid on your skillet.
  • Reduce the heat to low and let is cook and begin to bubble.
  • Remove the lid, sprinkle shredded cheese on top
  • Bake at 350 for 10 minutes, until the cheese melts.
  • Top it with shredded lettuce, salsa, tortilla strips and sour cream.
