
Chicken and Orzo Flip It Bowls
This recipe makes two bowls and is perfect for lunch.

Ingredients
2 tbsp extra virgin olive oil
2 tbsp Italian seasoning
1 tsp salt
juice of one lemon
red bell pepper, diced
1/2 cucumber, diced
1/4 red onion, diced
buttered orzo, cooked
boneless skinless chicken breast, sliced longways
2 cups chopped spinach
Recipe
- In a skillet, sauté your chicken breast slices until they’re completely cooked. Season it with salt and pepper to taste. Set aside.
- To assemble your bowls, pour 1 tbsp in each of the bowls.
- Then add your Italian seasoning (1 tbsp to each).
- Add your lemon juice, red bell peppers, cucumbers and onion.
- Add the cooked orzo and then chicken.
- I meal prep these in microwave safe bowls so once I assemble it, I put a lid on the container. When I’m ready to eat for lunch, I heat it up for about 1-2 minutes and then I flip the bowl over. Boom, it’s ready!
