Buffalo Chicken Tacos
These tacos are something special! They have spicy buffalo chicken, and there's also apples, walnuts, carrots and fresh romaine lettuce.

Ingredients
1 rotisserie chicken, shredded
1 cup buffalo sauce
1 head of romaine lettuce, washed and chopped
2 cups of shredded carrots
1 apple, shredded
tortilla bowls (however many you need for serving)
queso fresco
1/2 cup chopped walnuts
2 tbs honey
1 tbs olive oil
3 tbs brown sugar
Recipe
- In a skillet, head up your rotisserie chicken with your buffalo sauce for a couple minutes. Then set aside.
- In another small skillet, add the walnuts, olive oil, honey and brown sugar. This is the candy the walnuts and give the tacos an amazing crunch and sweet bite. You’ll let these cook for about 5-10 minutes. Continue to slowly stir it so they don’t burn. Remove those from the skillet and set on a piece of foil to cool off.
- Heat the tortilla bowls up in the microwave for around 10 seconds and now let’s start to assemble the tacos!
- To assemble: take the tortilla bowl, add lettuce, buffalo chicken, shredded carrots, shredded apples, walnuts and queso fresco.
- Note: When making this for my kids, I use bbq instead of buffalo sauce.
