Breakfast Pizza

This is a school morning breakfast hit! I have the ground sausage prepped and cooked already so it's quicker to make.

Ingredients

6 pieces of mini naan flatbread
1/2 lb ground sausage
6 eggs, beaten
3 cups shredded cheddar cheese
optional toppings: hot sauce, salsa

Recipe

  • In a medium sized skillet, cook your ground sausage until it’s browned.
  • Remove it from the skillet and set aside.
  • In that same skillet, cook your scrambled eggs.
  • While that’s cooking, heat up your griddle (or another medium skillet).
  • Grab your mini flatbread naan pieces and put them on your griddle.
  • Sprinkle 1/2 cup of shredded cheddar cheese on top of each piece. Let it melt a little bit.
  • Now it’s time to assemble the pizzas. Sprinkle a tbsp of sausage on top of each piece of naan.
  • Spoon some scrambled eggs on top of each naan.
  • Using a spatula, press down on the eggs and sausage a little bit so it sticks to the melted cheese.
  • Time to serve! I drizzle hot sauce on top of mine. I use a pizza cutter to slice the pizzas into four small pieces for my kiddos.

I have a griddle on the center of my stovetop. If you don’t have a griddle to use, you can use another medium skillet to assemble your pizzas.

For a vegetarian option, just leave off the sausage.
