- In a large bowl, whisk together all of your eggs.
- Add in the chopped bell peppers, milk and shredded cheese.
- Sprinkle in salt and pepper to taste.
- Bake at 350 for 20-25 minutes, until the eggs are cooked through.
- Store in an airtight container in the fridge for up to a week.


Breakfast is a must in my house. It kick starts the kid’s brain and body before school. I like to have something prepped so it’s easy and my kids can reheat them on their own. These muffins are really versatile. I sometimes add in cooked sausage or chopped broccoli. You can also spice it up by adding in different seasonings.
