Beetlejuice Dinner
Halloween is calling our name, but don't say "Beetlejuice, Beetlejuice...."

Ingredients
15-20 thawed, fresh shrimp (shell and tail on)
1 celery stalk, chopped
1 carrot, chopped
1/4 cup red onion, diced
1 lemon, cut in half
3 garlic cloves
2 tbs parsley
1 tbs thyme
1 tbs dill
1 bay leaf
2 tsp salt
medium box of noodle (I used black and white striped bow tie noodles)
15-20 wooden kabobs
small jar of Alfredo sauce
cocktail sauce to serve
small glass bowls for cocktail sauce
Recipe
- In a pot of boiling water, add bowtie noodles to cook. I used black and white striped noodles to it’s more a Beetlejuice vibe.
- Add celery, carrot, red onion, lemon, garlic, parsley, thyme, dill, bay leave and salt to a large pot of water.
- Let it simmer for 20-30 minutes.
- Take a wooden kabob stick and pierce it through an uncooked shrimp (shell and tail on) longways. This will keep it from curling as it cooks.
- Add the shrimp to the pot of water. Let the wooden stick poke out the top for something to grab on to. Let it cook for 3-5 minutes or until they’re cooked through.
- Pull them out of the water and place in an ice water bath.
- Drain the water from the noodles and mix in Alfredo sauce.
- Remove the wooden stick from the shrimp and peel the shrimp, leaving the tail on.
- To plate: shape the noodles like a snake. I add eyes and use leftover shrimp tail for the tongue. Then in a small cup, add cocktail sauce and then place the shrimp in there like that spooky hand from the movie.
