Beef and Broccoli Twice Baked Potatoes
The definition of comfort food, these potatoes are so delicious and a full meal!

Ingredients
4-6 potatoes (large brown ones)
3 tbsp olive oil
sea salt
1/2 lb ground beef
2 tbsp steak and chop seasoning
2 cup broccoli florets
salt and pepper to taste
2 cups shredded cheddar cheese, separated
1 1/2 cup heavy whipping cream
1/4 cup sour cream
Recipe
- Rub your potatoes with olive oil and lots of sea salt.
- Bake at 400 for 50 minutes.
- While those are baking, begin browning your ground beef in a medium skillet.
- Add the steak and chop seasoning to the beef.
- While that’s cooking, I steam 2 cups of fresh broccoli florets.
- When the potatoes are done, slice them longways to open the up, but not all the way through since you’ll fill them back up.
- Scoop the potato out of the skins and put it into a medium bowl.
- Add salt, pepper, 2 tbs butter, 1 cup cheese, ground beef, heavy whipping cream. Stir it all up really well until it’s all mixed together.
- Chop up your broccoli and add that into the bowl and give it a stir.
- Add the sour cream and stir.
- Spoon the mixture into the skins.
- Top each potato skin with cheese.
- Bake at 400 for 5 minutes, until the cheese is melted.
