Baked Chicken with Breadcrumbs

This is a 30-minute delicious chicken dinner that I love to make on busy weeknights.

Ingredients

5 boneless, skinless chicken breasts, cut longways in half
1/3 cup olive oil
1 cup shredded gouda cheese
2 tbsp green chiles
2 garlic cloves, minced
juice of 1 lemon
salt and pepper to taste
1 1/2 cups Italian panko breadcrumbs
2 tbsp melted butter

Recipe

  • Preheat your oven to 375F.
  • Grab a large baking sheet and add your olive oil, grated cheese, green chiles, minced garlic, lemon juice, salt and pepper.
  • Coat the chicken on both sides and arrange on the baking sheet.
  • Add the melted butter to your breadcrumbs and give it a stir.
  • Coat the top of the chicken with the breadcrumbs.
  • Bake for 20 minutes, or until the chicken was cooked through. If you want the chicken crispier, broil for the last couple minutes.
  • Enjoy!
