4 Dinners for Under $90

In this day and age, budgeting is necessary, but that doesn’t mean you can’t have delicious food on a budget. I visited Schnuck Markets and purchased groceries for 4 dinners and spent under $90. The dinners were hits in my home and I wanted to share it with you. Under each dinner, I’ve included a list of what you need for the recipe so be sure to jot that down on your grocery list before heading to the store to shop.

Dinner 1: Chicken Caesar Salad Wraps

You need: rotisserie chicken, romaine lettuce, tortilla wraps and caesar dressing

To make, you’ll chop up your chicken and mix some caesar dressing in with the chicken. To assemble, add your chicken to the tortilla wrap, add a handful of chopped romaine lettuce and then wrap it up tightly. Store in an airtight container through the week. These are great for dinners or lunch.

Dinner 2: Teriyaki Chicken and Broccoli with Rice

You need: rotisserie chicken, teriyaki sauce, frozen broccoli and jasmine rice

To make, you’ll chop up your rotisserie chicken and add it to a medium skillet. Add your teriyaki sauce into the pan and give it a stir. Add your broccoli to the pan with chicken and the sauce and cover with a lid. Let it cook on medium heat so the broccoli steams and becomes tender, stirring occasionally. Cook your rice according to the package. To plate, put your rice in a bowl and then spoon the chicken and broccoli over the top. Enjoy!

Dinner 3: BBQ Chicken Sandwich

You need: boneless skinless chicken breasts, bbq of your choice, burger buns and optional slaw to have on top

To make, put your chicken in the crockpot and add the sauce. Cook on low all day and about 30 minutes before you eat, shred the chicken and add it back into the crockpot. When you’re ready to serve, add your bbq chicken to the sandwich buns. If you want to add slaw, I like to use broccoli slaw and I mix it with a little red wine vinegar, mayo and salt and pepper. Enjoy!

You need: kielbasa sausage, cheese tortellini, fresh broccoli, garlic, parmesan cheese and olive oil
