Ranch Parmesan Chicken Skewers

Ingredients
2 lb boneless, skinless chicken breasts, cut into 2 inch cubes
2 tbsp olive oil
3 tbsp dry ranch seasoning, divided into 1 tbsp and 2 tbsp
4 tsp dried dill, divided (and a little extra for garnish)
2 tsp paprika
1 tsp garlic powder
2 tsp onion powder, divided
1 stick of butter
1/2 cup grated parmesan (and a little extra for garnish)
1 tbsp buffalo sauce
wooden skewers (that have been soaked in water)
Recipe
- Preheat your oven to 450.
- In a bowl, add the 1 1/2 tbsp dry ranch seasoning, 1 tsp dried dill, 2 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder. Add your cut up chicken. Drizzle with 2 tbsp olive oil and mix everything all together until all the chicken is evenly coated.
- Grab your wooden kabob sticks (that have soaked in water) and begin adding the chicken pieces to the sticks.
- Put the chicken kabobs on a foil-lined baking sheet.
- Next, add 1 stick of unsalted butter, 1/2 cup freshly grated parmesan cheese, 1 tbsp dry ranch seasoning, 2 tsp dried dill and 1 tsp onion powder to a small saucepan on medium low heat. Stirring it until it’s all melted. Add 1 tbsp buffalo sauce (adjust based on how spicy you want it) to the saucepan and stir.
- Drizzle 1/3 of the sauce on the chicken.
- Put the chicken in the oven for 7 minutes.
- Flip the kabobs over in the oven and then drizzle another 1/3 of the sauce over the chicken.
- Bake for another 7 minutes and then hit it with a broil for 3 minutes until the chicken is cooked through.
- Remove the chicken from the oven. Drizzle it with the remaining 1/3 of the sauce. Sprinkle with a little bit of parmesan cheese and dried dill.
- Enjoy! I like to add a little bit of buffalo sauce if I want it a little bit spicier.
