Spicy Chicken Bowl

This quick and delicious recipe is healthy and packed with flavor. It's a great weeknight dinner option.

Ingredients

1lb boneless, skinless chicken breasts, cut into 1 inch cubes
2 tbsp poultry seasoning (I use a smokey flavored)
salt and pepper to taste
1/2 cup mayo
1 tbsp garlic powder
1/4 cup buffalo sauce
juice of 1/2 lemon
1/2 tbsp dried parsley flakes
2 tbsp honey
4-5 cups white rice (adjust depending on serving size)
3 mini cucumbers sliced into thin coins

Recipe

  • Heat your medium sized skillet to medium heat and add a little olive oil to the pan. While that’s heating up, add your chicken chunks to a bowl and season them. I use a smokey poultry seasoning along with salt and pepper. Drizzle a little olive oil on top and mix it up.
  • Add your chicken to the skillet and cook the chicken until it’s cooked through.
  • While the chicken is cooking, you’ll prepare your rice. Cook the white rice according to the package.
  • Once everything is almost done, make your bang bang sauce. You’ll add mayo, garlic powder, buffalo sauce (or sriracha), lemon juice (or lime), dried parsley flakes, honey and give it a good stir.
  • To plate, add white rice to the bowl, add a spoonful of cooked chicken, chopped mini cucumbers and drizzle the bang bang sauce on top. Enjoy!
