
Unstuffed Pepper Bowls

Ingredients
2 cups cooked white rice
1lb ground beef
1/4 cup taco seasoning
1 cup water
1 red bell pepper, diced
1 yellow bell pepper, diced
1 zucchini, diced
2 garlic cloves, minced
1/2 white onion, diced
3/4 cup tomato sauce
3 tbs Worcestershire sauce
1 cup shredded cheese
1 lime, juiced
2 tbs dried parsley
Recipe
- Cook the rice according to the package and set aside.
- In a medium skillet, cook the ground beef. Once it’s brown, add in the taco seasoning and water.
- Add in the veggies and give it a good stir. Let this cook until the veggies begin to soften.
- Add in the tomato sauce and Worcestershire sauce. Stir and then sprinkle on the cheese and let it melt.
- Put your white rice in a medium bowl, add the lime juice and parsley. Give it a stir.
- To plate, put a spoonful of the rice in a bowl and then add a large spoonful of the meat mixture.
- Enjoy!
