Thanksgiving Leftover Shepherd’s Pie
Curious what to do with your Thanksgiving leftovers? This is my go to because it uses up the mashed potatoes, turkey, veggies and gravy.

Recipe
- Preheat your oven to 400.
- In a skillet, add in your chopped up hard veggies and a little olive oil. Sauté the veggies until they begin to soften.
- In a small pot, heat up some butter and add the leftover mashed potatoes. Heat them up and stir until they’re a smooth texture.
- Back to your veggies, add in the chopped up turkey, soft veggies (like green beans) and gravy. Give it a good stir.
- Grab a casserole dish and spoon the turkey mixture from the skillet into the bottom of the dish.
- Add your mashed potatoes over the top and smooth it out.
- Sprinkle with cheese and bake it for 15 minutes until the cheese is melted and the potatoes brown around the edges a little bit.
