Thanksgiving Leftover Shepherd’s Pie

Curious what to do with your Thanksgiving leftovers? This is my go to because it uses up the mashed potatoes, turkey, veggies and gravy.

Ingredients

Leftover turkey, cut up into chunks
Leftover veggies, separate your crunchy veggies from soft veggies
Leftover gravy
Leftover mashed potatoes
Butter
Shredded Cheese

Recipe

  • Preheat your oven to 400.
  • In a skillet, add in your chopped up hard veggies and a little olive oil. Sauté the veggies until they begin to soften.
  • In a small pot, heat up some butter and add the leftover mashed potatoes. Heat them up and stir until they’re a smooth texture.
  • Back to your veggies, add in the chopped up turkey, soft veggies (like green beans) and gravy. Give it a good stir.
  • Grab a casserole dish and spoon the turkey mixture from the skillet into the bottom of the dish.
  • Add your mashed potatoes over the top and smooth it out.
  • Sprinkle with cheese and bake it for 15 minutes until the cheese is melted and the potatoes brown around the edges a little bit.
