
Sheet Pan Balsamic Chicken and Veggies
An easy and delicious weeknight meal to make because only one pan! This dish has minimal prep and it's easy clean up.

Ingredients
4 chicken thighs, bone-in and skin on
salt and pepper to taste
1 cup balsamic vinaigrette
3 garlic cloves, minced
3 cups broccoli, chopped
1 red bell pepper, sliced
1/2 red onion, diced
3 tbs olive oil
1 tbs Italian seasoning
salt and pepper to taste for veggies
Recipe
- Preheat your oven to 425.
- Add your chicken to a bowl and add your salt, pepper, balsamic vinaigrette and garlic. Mix is together.
- On a sheet pan, place your chicken skin side up so it’s not touching. Set it aside.
- In another bowl, add in chopped broccoli, sliced red bell peppers, chopped red onion, olive oil and Italian seasoning.
- Mix it all together and then arrange it on the sheet pan so it fills the spaces around the chicken.
- Bake at 425 for 45 minutes. Ensure your chicken is cooked through.
- Optional: I like to broil it at the end for 2 minutes to crisp up the top of the chicken skin.
