Sausage Pancake Bites

You know those frozen store-bought sausage pancakes? Well this is a homemade version that's healthier and just as delicious.

Ingredients

1 cup pancake mix
1 cup water
2 tbs agave
box of refrigerated sausage links

Recipe

  • Preheat your oven to 350 degrees.
  • In a medium sized bowl, mix the pancake mix and water together.
  • Add the agave and mix it up.
  • Spray your mini muffin pan with non stick spray.
  • Pour the pancake batter into each muffin pan space about 3/4 full.
  • Cut the sausage links in half and then put one half of the sausage link into each mini muffin.
  • Bake at 350 for 15-20 minutes.
  • Let them cool completely and store in an airtight container in the fridge for up to a week.
  • To reheat, put them in a microwave save bowl and heat for 30 seconds.

This is a game changer for quick breakfasts for the school week! I like making these on Sunday and having them for the kids to grab and reheat throughout the week. Having a hearty breakfast is so important for the kiddos.

I like to use Full Circle Market Protein Pancake Mix and Applegate’s turkey sausage links. The ingredient list of these items I can get behind so it’s quick and healthy.
