Mini Chocolate Cakes
The easiest and satisfying individual dessert, these mini chocolate cakes are great for holiday baking.

Ingredients
6 tbsp butter, plus a little for coating the ramekins
2 tbsp flour, plus a little for coating the ramekins
5-6 oz of milk chocolate bars
2 eggs
1 egg yolk
1/4 cup granulated sugar
1 tbsp vanilla extract
1/4 tsp salt
Optional toppings: ice cream, chocolate syrup, fruit
Recipe
- Preheat your oven to 450 degrees.
- Butter and flour your individual serving dishes (or ramekins) and set them on a baking sheet. Set aside.
- Take your chocolate bar and using a serrated knife (bread knife works great), chop your chocolate bar up into smaller pieces.
- In a medium, microwave-safe bowl, add your chocolate and butter. Microwave in 30 second increments until it’s melted. Usually around 90 seconds or so. Once it’s melted, set aside.
- In a medium bowl, add your eggs, yolk, sugar, vanilla extract and salt. Using a hand mixer (or stand mixer) and beat on medium high for 3-5 minutes. You’ll mix this until the egg mixture is thick and pale.
- Add the melted chocolate and flour into the egg mixture and give it a good stir.
- Divide the batter into your prepared serving dishes (ramekins) around 3/4 full.
- Bake until the cake is set. You can also remove it a little early if you want a jiggly center for a melted chocolate texture in the middle. I bake this for 15 minutes or so.
- I serve this with a scoop of chocolate, but you can also serve this with chocolate syrup with fruit, etc.
