Lasagna Soup
The fire roasted tomatoes give this lasagna soup an edge. It's great to serve on a cold evening.

Ingredients
1lb ground sausage
1/2 white onion, diced
2 tbsp minced garlic
1 tsp dried parsley
1 tsp oregano
1 tsp basil
1/4 cup tomato paste
1-15 oz can of fire roasted tomatoes
1-15 oz can of tomato sauce
6 cups chicken broth
1/2 cup milk
1/3 cup ricotta cheese
package of fresh cheese tortellini
Recipe
- In a large skillet, cook your ground sausage.
- Once it’s almost done, add in the onion, garlic, parsley, oregano and basil and give it a stir.
- Add in the tomato paste, tomatoes and tomato sauce. Stir it all up.
- Pour in the chicken broth and slowly stir it up.
- Add in the milk and ricotta cheese and tortellini and stir it up.
- Bring it to a boil then cover and reduce the heat to a simmer for 15 minutes.
- Remove the lid and serve it up!
