Italian Grinder Sandwiches

These grinder sandwiches come together in 30 minutes are so flavorful. Easy to make and perfect for a lunch or dinner.

Ingredients

12 Hawaiian rolls
Gouda cheese, thinly sliced (or a cheese you prefer)
ham, thinly sliced
pepperoni, thinly sliced
salami, thinly sliced
2 tbsp butter
2 tbsp grated parmesan, and some extra to grate on top if you want
1/2 tsp garlic powder
1/4 tsp salt
8 ounces shredded lettuce
1/2 cup diced tomato
1/2 cup sliced pepperoncini peppers
1/4 cup mayo
1 tbsp red wine vinegar
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder

Recipe

  • Preheat the oven to 350 degrees.
  • On a baking sheet, slice your Hawaiian rolls horizontally to make sandwiches.
  • On the bottom half of the rolls, begin layering the cheese and meat– I layer the cheese, ham, pepperoni and then salami.
  • Add the top of the rolls back on.
  • Mix together the butter, grated parmesan, garlic powder and salt.
  • Brush the butter mixture on top of the rolls.
  • Bake in the oven for 15 minutes.
  • While that’s baking, you’ll make your grinder salad by mixing together the mayo, red wine vinegar, Italian seasoning, salt, pepper and garlic powder to form a dressing.
  • In a medium bowl, toss the lettuce, pepperoncini peppers, tomatoes and the dressing.
  • Once the sandwiches are done, remove the top, add the grinder salad and put the tops back on. Serve immediately.
