Homemade Z Bar Bread

I call this bread because it doesn't have the gummy texture like a z bar has. I make this bread, slice it and heat it up for 15-30 seconds when the kids want a snack. They're delicious.

Ingredients

1/2 cup rolled oats
1 1/4 cup flour
1/4 cup protein powder
1/4 tsp salt
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
2 tbsp brown sugar
1 tbsp honey
1/2 cup greek vanilla yogurt
1/2 cup milk
1 tsp vanilla extract
2 tsp coconut oil
1 tsp butter
1/2 cup mini chocolate chips (divided into 1/4 cup, 1/4 cup)

Recipe

  • Preheat the oven to 350 degrees.
  • Line an 8×8 baking dish with parchment paper with a little overlap so you can pull it out easily.
  • In a mixing bowl, combine the oats, flour, protein powder, salt, baking soda, baking powder, cinnamon and brown sugar. Stir it up.
  • In a separate bowl, stir together the honey, greek vanilla yogurt, milk, vanilla extract and coconut oil.
  • Gently stir the wet ingredients into the dry. Slowly add in 1/4 cup mini chocolate chips and give it a good stir. Let the batter sit for 3-5 minutes.
  • Pour the batter into the baking dish and bake at 350 degrees for 25 minutes, or until the edges begin to brown and it’s cooked through.
  • Completely cool. White that’s cooling, put the 1/4 cup mini chocolate chips and 1 tsp butter into a small microwave safe bowl. Heat for 15 seconds (or until the chocolate is melted and creamy).
  • Drizzle the chocolate over the top of the z bar bread and set it in the fridge for the chocolate to set.

I’m calling this “bread” because I don’t use fig which gives the z bars that gummy texture. We LOVE these in our house. The kiddos and I made these, cut them and then store them in an airtight container in the fridge all week. They’ll grab a piece or two and heat it up in the microwave for 15-30 seconds for breakfast. Since we use protein powder, it’s healthy and filling! For my oldest, she’ll have a hard boiled egg with it and my youngest two love eating this with bacon. Sweet and salty– which I love!
