Ingredients

large bed of kale
2 carrots, shaved
red onion, chopped and divided into 1/2 cup and 1/4 cup
1 pear, chopped
1 yellow bell pepper, diced
1/2 cup walnuts
2 tbsp pomegranate seeds
1/3 cup dried cranberries
1/2 cup freshly grated parmesan
For dressing: 1/2 cup olive oil, 2 tbsp red wine vinegar, juice of 1/2 lemon, 2 tbsp honey, 1 tbsp red onion chopped, salt and pepper to taste

Recipe

  • Begin by chopping up your veggies and fruits. I shave my carrots to give it a fun look and a crisp bite.
  • For your dressing, mix together olive oil, red wine vinegar, lemon juice, honey, 1 tbsp chopped red onion and salt and pepper to taste. Stir it up and set aside.
  • Let’s assemble the salad! Place your kale in a large bowl. Add the carrots, 1/4 cup red onion, pears, yellow bell peppers, walnuts, pomegranate seeds, dried cranberries and fresh parmesan.
  • Drizzle the dressing on the top and using tongs, mix, mix mix.
