French Toast Muffins
These French toast muffins skip the stovetop and go straight to the oven. They're so easy and delicious!

Ingredients
1 1/2 cups milk
5 eggs
2 tbsp sugar
2 tsp vanilla extract
1 tsp cinnamon
7 cups cubed brioche bread
crumble topping: 1/4 cup unsalted melted butter, 1/4 cup brown sugar, 1/4 cup flour, 1 tsp cinnamon and a pinch of salt
Recipe
- Preheat your oven to 350.
- Spray your muffin tin with nonstick cooking spray.
- In a large bowl, combine the milk, eggs, sugar, vanilla and cinnamon.
- Toss in the cubed brioche bread and mix it all up until the bread is soaked with the mixture.
- Fill the muffin tin with the brioche mixture.
- Mix the unsalted butter, brown sugar, flour, cinnamon and salt together using a hand mixer.
- Sprinkle that topping on each muffin brioche mixture.
- Bake for 30 minutes, or until golden brown.
- Top with powdered sugar and maple syrup.
