Creamy Chicken with Rigatoni

This 30 minute meal is simple and uses ingredients you probably already have in your pantry. Great for weeknight cooking!

Ingredients

1 1/2 lb boneless, skinless chicken breasts
3 tbsp chicken seasoning
2 tbsp olive oil
1 tbsp butter
2 garlic cloves, minced
1 pint heavy cream
2 cups shredded mozzarella cheese
1 cup shredded sharp white cheddar
1/2 box rigatoni noodles (or whatever noodles you want)
juice of 1/2 lemon
pinch of salt

Recipe

  • In a large skillet on medium heat, add olive oil and your boneless chicken breast. Season them and cook on that one side until the white is about halfway up the chicken breast.
  • Flip, season and then continue cooking the other side of the chicken breast until the chicken is completely cooked through.
  • While the chicken is cooking, boil your noodles until they’re done.
  • Remove the chicken from the skillet and then add in your butter, minced garlic until it’s all melted and you can smell the garlic.
  • Add in the heavy cream and give it a stir.
  • Add in the shredded cheese and continue stirring until the sauce begins to thicken.
  • While that’s simmering, slice your chicken into long pieces.
  • Using a colander, drain the noodles and then add the noodles into the sauce.
  • Give it a stir. Add a little bit of your seasoning, salt and lemon juice.
  • Stir it up and add in the sliced chicken. Give it another stir and then serve!
