
Chicken Tinga
Chicken Tinga is shredded chicken that's been cooked in a smoky tomato chipotle sauce. It's easy to make and always a hit in my home.

Ingredients
4 boneless skinless chicken breasts
1 large onion, cut into wedges
1 (14.5 oz) can fire-roasted diced tomatoes
1/2 cup chicken broth
3 tbsp minced chipotle peppers in adobo sauce
3 garlic cloves, minced
2 tsp ground cumin
1 tsp dried italian seasoning
1/2 tsp salt
corn tortillas for servings
optional toppings: shredded cheese, shredded lettuce, sour cream and taco sauce and pico de gallo
Recipe
- In your crockpot, add the boneless, skinless chicken breasts along with the chopped onion, fire-roasted tomatoes, chicken broth, chipotle peppers in adobo sauce, minced garlic, cumin, Italian seasoning and salt.
- Cook on low until the chicken is cooked through. Remove the chicken and shred it and then add it back into the crockpot to soak up all the juices.
- When you’re ready to serve, heat your corn tortillas (I like to do this on the stovetop) and then fill the tortilla with chicken, top it with cheese, shredded lettuce, sour cream and a little taco sauce.
This is a great meal prepping option too because you can prep your chicken and then store it in the fridge in an air tight container.
