
Breakfast Bites
These breakfast bites are a great school or summer breakfast. They are packed with protein, calcium, fiber and are naturally sweetened with bananas and maple syrup.

- Preheat your oven to 350 degrees.
- In a large bowl, mash your bananas, peanut butter, maple syrup, egg, vanilla extra and give it a good stir.
- To that same bowl, add in your oat flour, flaxseed meal, baking soda, salt, oats, chia seeds and chocolate. Stir until it’s all combined.
- Line a baking sheet with parchment paper and using a scoop, scoop the bites onto the baking sheet. I like them to be about 2-3 tbsp of dough each. Leave around 2-3 inch between each scoop.
- Bake at 350 for around 10-12 minutes and then cool completely.
- Store in an airtight container to each throughout the week.
Storing options
To store: I keep these in an airtight container at room temp for a few days, but if they aren’t gone after a few days, I’ll move them to the fridge to keep them fresh. My kids like to heat them up for around 10-15 seconds before eating.
Freezer: The cookies need to be completely cooled and then you can store them in a gallon bag in the freezer for up to 2 months. Once you want to eat them, just thaw them at room temp and enjoy!
