Boneless Chicken Thighs with Broccoli and Potatoes

Ingredients
1 lb boneless skinless chicken thighs
4 small Yukon gold potatoes
2 heads of broccoli
1 tsp sea salt
1 tbs oregano
1 tsp dried basil
1 tbs garlic powder
1 tsp black pepper
1/3 cup extra virgin olive oil
Recipe
- Preheat your oven to 395 degrees.
- Wash your potatoes and broccoli.
- Cut your potatoes into 1-2 inch cubes and put them into a medium sized bowl.
- Cut your heads of broccoli into florets and place into the medium bowl with the potatoes.
- Place your boneless chicken thighs into the medium bowl.
- Pour 1/3 cup of olive oil into the bowl.
- Add all of the seasoning to the medium bowl. Stir it a lot until it’s all combined.
- Arrange your chicken, potatoes and broccoli on a greased sheet pan. Make sure it’s in a single layer so it cooks evenly.
- Bake for 30 minutes or until the chicken and potatoes are cooked through.
