Boneless Chicken Thighs with Broccoli and Potatoes

A sheet pan meal that's quick and was for a great cause.

Ingredients

1 lb boneless skinless chicken thighs
4 small Yukon gold potatoes
2 heads of broccoli
1 tsp sea salt
1 tbs oregano
1 tsp dried basil
1 tbs garlic powder
1 tsp black pepper
1/3 cup extra virgin olive oil

Recipe

  • Preheat your oven to 395 degrees.
  • Wash your potatoes and broccoli.
  • Cut your potatoes into 1-2 inch cubes and put them into a medium sized bowl.
  • Cut your heads of broccoli into florets and place into the medium bowl with the potatoes.
  • Place your boneless chicken thighs into the medium bowl.
  • Pour 1/3 cup of olive oil into the bowl.
  • Add all of the seasoning to the medium bowl. Stir it a lot until it’s all combined.
  • Arrange your chicken, potatoes and broccoli on a greased sheet pan. Make sure it’s in a single layer so it cooks evenly.
  • Bake for 30 minutes or until the chicken and potatoes are cooked through.
