Serves

4-6 servings

Ingredients

1-2 lb ground beef
taco seasoning and water
2 red bell pepper, sliced into long strips
1/2 white onion, sliced into long strips
juice of 1/2 lime
2 cups shredded cheddar cheese
tortillas

Recipe

  • Preheat your oven to 350.
  • In a medium skillet, brown your ground beef.
  • Once it’s brown, add your taco seasoning and water. Mix it all up and cook for about 5 minutes.
  • Remove the beef from the skillet and set aside.
  • In that same skillet, add your red bell pepper and onion. Sauté for a few minutes.
  • Add your beef back in and your lime juice.
  • On a baking sheet, lay out a tortilla, fill it with some taco meat filling, sprinkle a little cheese and fold it over to close. Continue doing this until all of the tortillas are used and the taco meat is done.
  • Put a baking sheet on top of the tacos that are on the baking sheet. This presses the tacos closed while they bake.
  • Bake for 10 minutes and then remove from the heat.
  • Enjoy!
