Welcome to my series, “Dinner I Fed My Family of 5 Last Week.” The goal is to help busy moms meal plan with ideas for dinners and a grocery list. Amazing, right? I love this because I make my grocery list for dinners and I just give you all the information afterward. Win, Win!

When meal planning, the grocery list is the hardest part to make sure you get everything you need without overspending. This list does not include school lunches for my kids. For those, it’s pretty straight forward– they like deli sandwiches with a fruit, veggie and chips. If you want to be sure to get that stuff too, be sure to add that to the grocery list I provide.

Keep in mind, I meal prep so I make this and then we reheat the leftovers throughout the week too.

This is a great 30 minute meal for a weeknight. I double the batch so we can have it twice throughout the week. Here’s the recipe.

Bone-In chicken Wings

These wings are so delicious. I make these for a weeknight or a family get together. The key to getting them crispy is to coat them in baking powder AND cook them on a rack on a cooking sheet so the juices drip off.

Making approximately 1 1/2 lb of chicken, you’ll coat the wings in 2 tbsp baking powder, 1 tbsp garlic powder, 1 tbsp onion powder and 1 tbsp poultry seasoning of your choice.

Once they’re coated, grease your cooking sheet and rack so the wings don’t stick. Arrange the chicken in a single layer on the rack. Bake at 425 for 20 minutes. Flip and then bake for another 20 minutes. While those are baking, I make the wing sauce. I mix buffalo sauce and brown sugar together in a small saucepan on medium heat. Adjust the buffalo sauce based on how spicy you want it. Once the wings are done, you’ll coat them with the sauce and enjoy! I serve these with veggies and crinkle fries.

Preheat your oven to the baking time on the flatbread dough. Grab your baking sheet and sprinkle 2 tbsp of corn meal on the baking sheet and then spread your dough out. I make two flatbread pizzas. Put it in the oven to bake for around 10 minutes while you prepare your toppings. Grab your rotisserie chicken and cut it into small cubes. I use 1-2 chicken breasts per flatbread. Toss that chicken into a bowl. Chop up one green bell pepper and put that into the bowl as well. Shred one large brick of cheddar and mozzarella cheese and thinly slice 1/2 red onion. I only use 1/2 because my kids don’t like red onion so I only put it on half the pizzas. The pizzas are ready to be made! Add bbq sauce to the base as your sauce and spread it around. The amount can be based on how much you want. Then sprinkle cheese on top and then the chicken and bell peppers. Add the red onion on top if you want those. Bake at 425 degrees for 12-15 minutes, until the cheese is melted, the crust is crisp and the bell peppers are mostly softened.
