Dinners I Fed My Family of 5 (Jan 19)

This is a new series I’m starting and I’m really excited about it! The goal is to help busy moms meal plan with ideas for dinners and a grocery list, but I’ll also add some breakfast and side dish ideas too. The grocery shopping is the hardest part to make sure you get everything you need without overspending. This list does not include lunches for my kids. For those, it’s pretty straight forward– they like deli sandwiches with a fruit, veggie and chips. If you want to be sure to get that stuff too, be sure to add that to the grocery list I provide.

Below I have the meals I made with instructions under them, links to the recipes or links to how to make it on my Instagram. Be sure to follow my Instagram so you don’t miss out on recipes and motherhood.

Keep in mind, I meal prep so I make this and then we reheat the leftovers throughout the week too.

crockpot sausage and potatoes

Crockpot Sausage and Potatoes is so easy and my family loves it! This is a recipe I make new moms too. It can freeze, it can be reheated and it’s so versatile. Here’s the recipe.

Wonton Taco cups

Cook 1 lb of ground beef in a medium skillet. Add taco seasoning and water (according to taco seasoning packet) and cook until it’s combined. Add in one can of rotel and give it a good stir. Place 1-2 wontons in the muffin tins and press down so it’s like a bowl. Using a slotted spoon, add the meat mixture to each muffin tin so the meat is almost to the top, but not overflowing. Sprinkle some shredded cheese on top. Bake at 375 for 13-15 minutes. Top with sour cream, cheese, tomatoes and green onion. I serve this with corn.

Preheat the oven to 350. Heat the BBQ pulled pork on the skillet (I buy the bbq pork premade at Dierbergs). To make the sandwiches, put the bottom part of the Hawaiian roll on a baking sheet. Add a little bit of pork, a small piece of provolone cheese the top of the bun and then bake for 5 minutes or so until the cheese is melted and the bun is a little crisp. I serve this with Annie’s mac and cheese and green beans.

1 lb ground beef, cooked
3 cups carrots, shredded
1 bag of broccoli slaw
2 packages of ramen, you’ll use the noodles, not the seasoning
1/3 cup soy sauce
1 tbsp brown sugar
2 cups chicken bone broth, and a reserved one cup to add when you add the noodles

To make:
Add the cooked ground beef, carrots, slaw, soy sauce, brown sugar and chicken broth to the crockpot. Give it a big stir and then cook it on low for 5 hours. 30 minutes before you plan to eat, add the uncooked noodles to the crockpot, add the cup of chicken broth, stir and let it cook for another 30 minutes, until the noodles are tender. Once it’s done, serve it up!

4 ingredient biscuits

The recipe on how to make these can be found here. My kids like to put jelly, gravy or peanut butter on the warm biscuits. Whichever you prefer, you’ll want to add that to your grocery list.

cucumber caprese salad

Cut 2 or 3 mini cucumbers into coins, chop your cherry tomatoes in half then add the cucumbers, tomatoes, mozzarella pearls into a bowl. Add 2 tbsp Italian seasoning, a little salt and 2 tsp olive oil on top and give it a big serve. Serve cold.
