
Peach and Ricotta Bruschetta
This peach and ricotta bruschetta is a great appetizer to make for a party. It's so simple, but elevated which is a nice touch.

Ingredients
3 peaches
1 tbsp olive oil
juice of 1/2 lemon
1 tbsp parsley, finely chopped
pinch of salt and pepper
1 baguette
1 clove garlic, minced
2 tbsp butter
1/2 to 1 cup ricotta cheese
balsamic glaze
Recipe
- Preheat your oven to 400 degrees.
- Take your peaches and cut them up into small pieces. Drizzle 1 tbsp of olive oil over the peaches, add juice of 1/2 lemon, a pinch of salt and pepper and 1 tbsp of chopped parsley. Give it a good stir and then put it in the fridge.
- Slice your baguette into 1/2 inch slices to make the bottom of the bruschetta.
- In a small saucepan, melt 2 tbsp butter and add in 1 clove of minced garlic and let it cook for a few minutes, stirring continuously.
- Arrange the slices of bread on a cooking sheet. Drizzle the butter mixture on top of the pieces of bread.
- Bake at 400 for 5 minutes, until they’re a little hard and slightly brown.
- Remove from the oven and let cook.
- Spread ricotta cheese on top of the bread slices and spoon the peach mixture on top.
- Drizzle with a balsamic glaze and serve!
